Medium to small yellowish-green berries with notably soft, thin skins. The flesh is distinctively grassy in flavour β€” an early indicator of the wine's herbaceous character. The methoxypyrazines that give the wine its green, capsicum character are concentrated in these skins.

SA produces 53% of all Chenin Blanc globally. It is SA's most planted grape at 18.6% of all vine plantings. "Steendruiven" was likely among the first grapes pressed in 1659. The Old Vine Project celebrates Chenin vines 35+ years old β€” over 6,000 hectares are 20+ years old.

Sauvignon Blanc is the quintessential SA alfresco wine β€” poured over ice at a braai, paired with West Coast seafood, or alongside freshly caught yellowtail. Its piercing acidity mirrors the lemon and vinegar dressings central to SA cuisine, making it a natural bridge to everything from green salads to grilled fish at Kalk Bay harbour.

Pick Early β€” Aromatics First
Early picking preserves the high acidity and pungent aromatics. Waiting too long sacrifices the freshness that defines Sauvignon Blanc's character. Cool-region early mornings are ideal.

Stainless Steel β€” Standard
Press, add yeast, ferment, rack, fine, bottle. Most Sauvignon Blanc is this simple β€” and it works. The fruit and aromatics need nothing added. Commercial styles are best fresh.

Oak β€” Difficult to Execute
Sauvignon Blanc can be fermented in oak but it's difficult to get right. The top Bordeaux-style oaked versions (Graves, Pessac-LΓ©ognan) use lees stirring and MLF to create powerful, full-bodied styles blended with Semillon.

Drink Young β€” Almost Always
Most Sauvignon Blanc is best drunk as young as possible. Only the top 5% in SA is suitable for ageing. With time, green asparagus, herbal, and tinned pea characters dominate β€” fine if you enjoy that style.

Machine or Hand Harvest
Unlike premium reds, Sauvignon Blanc doesn't require hand harvesting. NZ uses almost entirely machine harvesting. SA mainly hand harvests. Both approaches can produce excellent wine.

Don't Fear the Screwcap

Most Sauvignon Blanc is genuinely better under screwcap than cork. The screwcap preserves the fresh, aromatic, zesty character that defines the variety. A screwcap is a sign of quality-conscious winemaking β€” not cheap wine.

The SA Advantage β€” Hand Harvesting

Unlike NZ where machine harvesting dominates, SA mainly hand harvests. This allows better grape selection and cooler handling β€” important for maintaining Sauvignon Blanc's delicate aromatics.
