Small, Round, Black with Tough Thick Skins

Small, round, intensely black berries with notoriously tough, thick skins and a large number of seeds โ€” both high in phenols and anthocyanins. The firm flesh has a distinctively grassy flavour. These structural properties are the source of Cabernet's legendary tannins, colour, and ageing potential.

03 Tasting Profile

Cabernet Sauvignon will always be high in tannins, always high acidity, always full-bodied, and almost always dry. Alcohol 13.5% or higher. Look for blackcurrant, cassis, plums, and black cherries with herbaceous notes from methoxypyrazines, and oak expressing as vanilla, mocha, cigar box, and smoke. A SA Stellenbosch Cab typically shows plum, mulberry, blackberry, cassis, chocolate and cigar box.

05 Winemaking

Low Yield โ€” Non-Negotiable
Cabernet is a super vigorous vine. Forcing lower yields through pruning concentrates flavour. High-yield Cab = dilute, green, unbalanced wine. Premium Cab = controlled, low-yield vines.

Maceration โ€” Extract Everything
Thick skins, high acid, and high tannins need time to extract. Longer maceration + higher temperature + punch-downs = more colour, tannin, flavour. A critical winemaking decision.

Oak โ€” An Incredible Marriage
New French or American oak is synonymous with Cab. One of the few grapes that can handle large amounts of oak for long periods. After 10โ€“30 years, the oak and wine become seamless.

Blending Decisions
Merlot softens tannins and adds plush velvet. Cab Franc adds structure and floral lift. Petit Verdot adds colour and spice. Pinotage (30โ€“70%) creates a Cape Blend โ€” not a legislated style.

Ageing โ€” Time is Everything
Cabernet needs time. Great Cabs need minimum 5 years to start showing their best. With bottle ageing, polyphenols, anthocyanins, tannins, and acidity evolve โ€” wines can last 20โ€“30+ years.

The grape that loves new oak.

One of the very few grapes that can handle large amounts of new oak for long periods. After a decade in bottle, the oak and wine become so seamless you cannot separate them.

Stainless / Concrete

Fresher, fruit-forward. Less common for premium Cab. Good for earlier drinking.

New French Oak

The benchmark. Cedar, vanilla, cassis integration. Needs 5+ years to harmonise.

New American Oak

Coconut, vanilla, sweeter spice. Common in Napa and some SA producers.

20โ€“30 Years Bottle

Oak becomes invisible. Pencil shavings, cedar, leather โ€” pure terroir.

Tannin Management โ€” The Key

Ripe tannins are the goal โ€” the difference between great Cab and harsh, astringent Cab is tannin ripeness. Mouth-puckering on your gums = ripe tannin. Bitter drying astringency = unripe. With red meat, ripe tannins dissolve completely.
