Dark Green, Medium & Five-Lobed with Overlap
Cabernet Sauvignon leaves are dark green, medium sized, and distinctively five-lobed with overlapping sinuses โ one of the most recognisable vine leaves in the world. A very vigorous grower producing hard wood, but ripening slowly.
Small, Round, Black with Tough Thick Skins
Small, round, intensely black berries with notoriously tough, thick skins and a large number of seeds โ both high in phenols and anthocyanins. The firm flesh has a distinctively grassy flavour. These structural properties are the source of Cabernet's legendary tannins, colour, and ageing potential.

Left Bank Bordeaux โ gravelly soils of Mรฉdoc and Graves โ is Cabernet's spiritual home. Blended with Merlot, Cab Franc, Petit Verdot. The greatest examples smell expensive.
California's 1/6-the-size-of-Bordeaux answer to the world. Opulent, fruit-forward, powerful. Grapes up to $50,000 per ton. Strong domestic DTC brand.
SA Cab straddles Old and New World. Ripe and fruity without being jammy. Stellenbosch is the heartland โ plum, mulberry, cassis, chocolate, cigar box. World-class at accessible prices.
02 Where It Flourishes
Cabernet Sauvignon is SA's most planted red grape at 11% of all vine plantings. Associated with premium single varietal wines since the 1920s. Used in single varietals, Cape Blends, and Bordeaux-style blends.
03 Tasting Profile
Cabernet Sauvignon will always be high in tannins, always high acidity, always full-bodied, and almost always dry. Alcohol 13.5% or higher. Look for blackcurrant, cassis, plums, and black cherries with herbaceous notes from methoxypyrazines, and oak expressing as vanilla, mocha, cigar box, and smoke. A SA Stellenbosch Cab typically shows plum, mulberry, blackberry, cassis, chocolate and cigar box.
04Food Pairing โ SA Cuisine
Red Meat & Braai
Cab's high tannins and acidity break down protein in red meat, while the meat dissolves the tannins. A symbiotic relationship โ each makes the other taste better.
Cabernet's high tannins and acidity make it the perfect braai companion โ chargrilled proteins dissolve the tannins while the wine's smoky cedar notes echo the coals. The peppercorn character in the wine is a natural match for SA's love of spiced sauces and marinades. Even a casual burger alongside a serious bottle of Cab just works.
05 Winemaking
One of the very few grapes that can handle large amounts of new oak for long periods. After a decade in bottle, the oak and wine become so seamless you cannot separate them.
Fresher, fruit-forward. Less common for premium Cab. Good for earlier drinking.
The benchmark. Cedar, vanilla, cassis integration. Needs 5+ years to harmonise.
Coconut, vanilla, sweeter spice. Common in Napa and some SA producers.
Oak becomes invisible. Pencil shavings, cedar, leather โ pure terroir.
Ripe tannins are the goal โ the difference between great Cab and harsh, astringent Cab is tannin ripeness. Mouth-puckering on your gums = ripe tannin. Bitter drying astringency = unripe. With red meat, ripe tannins dissolve completely.
