01 In the Vineyard

The Leaf

Round, Dark Green & Three to Five-Lobed

Chenin Blanc leaves are medium sized, round, and dark green with three to five lobes. Early budding makes the vines vulnerable to spring frost — a key management challenge in SA's variable spring climate.

SizeMedium sized
ColourDark green
Shape Round, 3 to 5 lobes
BuddingEarly — vulnerable to spring frost
RipeningMid season
VigourVigorous on own roots in fine-textured soil

The Grape

Medium, Oval, Yellow-Green with Thick Skins

Medium-sized, oval, yellow-green berries with notably thick skins — the source of Chenin's phenolic bite and its natural susceptibility to botrytis. The juicy flesh carries the grape's hallmark high acidity.

ColourYellow-green — distinctively pale

03 Tasting Profile

Chenin's calling card is its assertive acidity — woven through the wine like a spine. It is more cerebral than hedonistic. SA Chenin displays apple, quince, melon, apricot, guava and pineapple with a floral honeysuckle quality. Oak and lees add honey, nuts, toffee and toast. Top SA examples need 8–10 years to show their best.

Why it works across SA cuisine

Chenin Blanc's remarkable versatility means it pairs with almost anything. The high acidity matches the freshness of West Coast seafood, cuts through Cape Malay spices and cream-based dishes, and the sweeter styles complement the fruit-forward heat of a good curry. Off-dry styles are SA's ultimate braai white.

05 Winemaking

01
Harvest Timing — Everything
Picking early gives leaner, more mineral style. Picking riper gives more sugar and phenolic character. The harvest decision dictates the entire wine's personality.
02
Commercial — Stainless Steel
Cultured yeast, stainless steel, fermented dry or with residual sugar, bottled early. Fresh, fruit-forward, easy drinking. Often sealed with screwcap.
03
Premium — French Oak & Lees
New French oak barrel fermentation plus significant lees ageing adds honey, toast, and vanilla. High alcohol, ripe, rich and oaky. Sometimes mistaken for Chardonnay — but more acidic.
04
Top-End — Reductive Old Oak
The dominant premium style. Long lees contact in old oak. Reductive winemaking. Mineral, austere, tighter, leaner. Concrete eggs and amphora also used. These wines demand time.
05
Sparkling & Sweet Styles
Chenin's natural high acidity makes it ideal for Méthode Cap Classique sparkling wine. Botrytis-affected late harvest styles can age for decades.
The winemaker's equation.

Chenin Blanc is the grape where winemaking decisions matter most. The same grape, same vineyard — dramatically different results depending on vessel, oak, lees, and timing.

Stainless steel + early bottling Fruit-forward, Fresh
New French oak + lees stirring Rich, Creamy, Oaked
Old oak + reductive + time Mineral, Austere, Age-worthy
Late harvest + botrytis Honeyed, Sweet, Complex
The Concrete Egg & Amphora Revolution

SA winemakers increasingly use concrete eggs and amphora for Chenin fermentation and ageing. These vessels allow micro-oxygenation without oak flavour — producing wines with texture and complexity that are neither obviously oaked nor reductively mineral.
