Moderate to Vigorous, Thrive in Cool Regions
Sauvignon Blanc vines are moderate to vigorous growers that genuinely thrive in cooler climates. Lose their aromatics β the most prized characteristic β if growth becomes too vigorous. One of few varieties that doesn't need a low yield to produce quality.
Medium-Small, Yellowish Green with Soft Thin Skins
Medium to small yellowish-green berries with notably soft, thin skins. The flesh is distinctively grassy in flavour β an early indicator of the wine's herbaceous character. The methoxypyrazines that give the wine its green, capsicum character are concentrated in these skins.
β Three Styles, One Grape
Sauvignon Blanc tastes radically different depending on where it grows. Three regions have defined the template β SA sits right between France and New Zealand.
Sancerre and Pouilly FumΓ©. Discreet, aristocratic. Mineral "river pebble" character. Doesn't jump out of the glass β more "come hither".
The style that disrupted the wine world in 1979. Pungently aromatic, tropical. Marlborough's 80% of NZ Sauv Blanc set the global benchmark.

02 Where It Flourishes
SA produces 53% of all Chenin Blanc globally. It is SA's most planted grape at 18.6% of all vine plantings. "Steendruiven" was likely among the first grapes pressed in 1659. The Old Vine Project celebrates Chenin vines 35+ years old β over 6,000 hectares are 20+ years old.

SA Sauvignon Blancs are some of the world's ripest in terms of fruit flavour, with vibrant acidity to match, a green and herbal quality, and pungent elderflower aromas with the grape's distinctive herbaceous character.

SA Seafood & Ocean
Sauvignon Blanc is made for seafood. Think of the wine as the drizzle of lemon you'd normally squirt over your oyster β that's exactly what it does in the glass.
Sauvignon Blanc is the quintessential SA alfresco wine β poured over ice at a braai, paired with West Coast seafood, or alongside freshly caught yellowtail. Its piercing acidity mirrors the lemon and vinegar dressings central to SA cuisine, making it a natural bridge to everything from green salads to grilled fish at Kalk Bay harbour.
05 Winemaking
Most Sauvignon Blanc is genuinely better under screwcap than cork. The screwcap preserves the fresh, aromatic, zesty character that defines the variety. A screwcap is a sign of quality-conscious winemaking β not cheap wine.
Unlike NZ where machine harvesting dominates, SA mainly hand harvests. This allows better grape selection and cooler handling β important for maintaining Sauvignon Blanc's delicate aromatics.
